Chocolate Peanut Butter Cream Cheese Bars Recipe

Ingredients
  • 1 c unbleached all-purpose flour
  • 1 tbsp rum
  • 1/4 tsp salt
  • 1/4 c packed brown sugar
  • 1/2 c packed brown sugar
  • 1 (8 oz) package cream cheese
  • 1 tbsp vanilla extract
  • 1 tsp water
  • 1/2 c white sugar
  • 1 tbsp rum
  • 2 c peanut butter chips
  • 1/4 c semisweet chocolate chips
  • 1/3 c butter, softened
  • 1 c all-purpose flour
  • 1/2 c butter, softened
  • 1/2 tsp baking powder
  • 3/4 c semisweet chocolate chips

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 To Make Crust: Combine 1 c flour, 1/4 c packed brown sugar, 1/2 c butter or margarine & 3/4 c melted chocolate chips in large bowl.
  • Step #3 Mix well.
  • Step #4 Press into bottom of ungreased 11 x 7 inch pan.
  • Step #5 Top with 2 c peanut butter chips To Make Filling: Beat 1/2 c white sugar, 1/2 c brown sugar, 1/3 c butter & 8 oz.
  • Step #6 cream cheese in large bowl until smooth.
  • Step #7 Add 1 c unbleached flour, 1/2 tsp baking powder, 1/4 tsp salt, 1 tbsp vanilla & 1 tbsp rum.
  • Step #8 Blend well.
  • Step #9 Spread over peanut butter chips.
  • Step #10 Bake until edges are light brown & set, 35-40 mins.
  • Step #11 Let cool for 30 mins.
  • Step #12 To Make Glaze: Melt 1/4 c chocolate chips with1 tbsp rum & 1 tsp water in small saucepan over low heat/flame.
  • Step #13 Stir constantly until smooth.
  • Step #14 Drizzle over filling while warm.
  • Step #15 Refrigerate 1 hr & cut into bars.
  • Step #16 Store in refrigerator.
