Ingredients
  • 1/8 tsp ground nutmeg
  • 1/2 c candied pineapple chunks
  • 1/2 c butter
  • 1/3 c white sugar
  • 1 egg
  • 1 tsp baking powder
  • 2 tbsps slivered almonds
  • 1/2 tsp vanilla extract
  • 1/8 tsp baking soda
  • 1/4 c packed light brown sugar
  • 1 1/2 c all-purpose flour

Directions
  • Step #1 Grease & line a 9x5 inch loaf pan with parchment paper.
  • Step #2 Cream butter & sugar until light & fluffy.
  • Step #3 Add egg & mix well.
  • Step #4 Stir in flour, baking powder, vanilla, candied pineapple, ground nutmeg, & almond slivers.
  • Step #5 Mix well.
  • Step #6 Put in prepared loaf pan.
  • Step #7 Freeze overnight.
  • Step #8 Preheat oven to 350 degrees F (175 degrees C).
  • Step #9 Slice crosswise & bake on an ungreased cookie sheet for 10 to 12 mins.
