2 skinless, boneless chicken breast halves - boiled & shredded
1 (7 oz) can sliced green chile peppers
2 c shredded Monterey Jack cheese
1 (10 oz) can red enchilada sauce
1 (1 oz) package taco seasoning mix
1/2 c sour cream
1/2 c sliced onion
1 pinch ground black pepper

Step #1
To Make Meat Mixture: Heat oil in medium skillet over medium high heat.
Step #2 Add chicken, onion & green chile peppers & saute until browned, then add taco seasoning & prepare meat mixture according to package directions.
Step #3 To Make Cheese Mixture: In a medium bowl mix sour cream with cottage cheese & season this with salt & pepper; stir until well mixed.
Step #4 Preheat oven to 350 degrees F (175 degrees C).
Step #5 To Assemble Enchiladas: Heat tortillas until soft.
Step #6 In each tortilla place a spoonful of meat mixture, a spoonful of cheese mixture & a bit of shredded cheese.
Step #7 Roll tortillas & place this in a lightly greased 9x13 inch baking dish.
Step #8 Top with any remaining meat & cheese mixture, enchilada sauce & remaining shredded cheese.
Step #9 Bake at 350 degrees F (175 degrees C) for 30 mins or until cheese is melted & bubbly.
