Cottage Cheese Chicken Enchiladas Recipe

Ingredients
  • 12 (6 inch) corn tortillas
  • 1 tsp salt
  • 1 tbsp vegetable oil
  • 2 c cottage cheese
  • 2 skinless, boneless chicken breast halves - boiled & shredded
  • 1 (7 oz) can sliced green chile peppers
  • 2 c shredded Monterey Jack cheese
  • 1 (10 oz) can red enchilada sauce
  • 1 (1 oz) package taco seasoning mix
  • 1/2 c sour cream
  • 1/2 c sliced onion
  • 1 pinch ground black pepper

Directions
  • Step #1 To Make Meat Mixture: Heat oil in medium skillet over medium high heat.
  • Step #2 Add chicken, onion & green chile peppers & saute until browned, then add taco seasoning & prepare meat mixture according to package directions.
  • Step #3 To Make Cheese Mixture: In a medium bowl mix sour cream with cottage cheese & season this with salt & pepper; stir until well mixed.
  • Step #4 Preheat oven to 350 degrees F (175 degrees C).
  • Step #5 To Assemble Enchiladas: Heat tortillas until soft.
  • Step #6 In each tortilla place a spoonful of meat mixture, a spoonful of cheese mixture & a bit of shredded cheese.
  • Step #7 Roll tortillas & place this in a lightly greased 9x13 inch baking dish.
  • Step #8 Top with any remaining meat & cheese mixture, enchilada sauce & remaining shredded cheese.
  • Step #9 Bake at 350 degrees F (175 degrees C) for 30 mins or until cheese is melted & bubbly.
