Step #1 Preheat oven to 450 degrees F (225 degrees C).
Step #2 Roll out pastry & set aside.
Step #3 Bring water to a boil in a large saucepan.
Step #4 In a small bowl mix together sugar & cream of tartar.
Step #5 Add mixture to boiling water.
Step #6 Stir, then add crackers, one at a time.
Step #7 Boil for 3 mins, but do not stir.
Step #8 Pour cracker mixture into pastry-lined pie pan.
Step #9 Sprinkle top crackers with cinnamon & dot with butter or margarine.
Step #10 Cover with top pastry.
Step #11 Seal edges & cut steam vents in top.
Step #12 Bake in preheated oven for 30 mins, until crust is golden brown.
Step #13 May need to cover top pastry partway through baking to prevent overbrowning.
