Ingredients
1/4 c water
2 c shredded mozzarella cheese
4 eggs, beaten
1/2 tsp salt
2 c milk
2 (8 oz) cans tomato sauce
1/4 c grated Parmesan cheese
1/4 c all-purpose flour
1 (16 oz) package rigatoni or large tube pasta
2 tbsps butter
Directions
Step #1 Cook pasta according to package directions.
Step #2 Meanwhile, in a saucepan, melt butter.
Step #3 Stir in flour & salt until smooth; slowly add milk & water.
Step #4 Bring to a boil; cook & stir for 2 mins or until thickened.
Step #5 Drain pasta; place this in a large bowl.
Step #6 Add eggs.
Step #7 Spoon into two greased 8-in.
Step #8 square baking dishes.
Step #9 Top each with one can of tomato sauce & mozzarella cheese.
Step #10 Spoon white sauce over top; sprinkle with Parmesan cheese.
Step #11 Cover & freeze one casserole for up to 3 months.
Step #12 Bake second casserole, uncovered, at 375 degrees F for 30-35 mins or until a meat thermometer reads 160 degrees F.
