Chicken Fajita Salad Recipe

Ingredients
  • 1 c whole almonds, toasted
  • 2 tbsps cooking oil, divided
  • 1/2 tsp oregano
  • 1 onion, cut into thin wedges
  • 1 lb boneless, skinless chicken breasts cut into thin strips
  • 3 tomatoes, cut into wedges
  • 1 avocado, sliced
  • 1/2 tsp ground cumin
  • 1 (7 oz) can sliced green chilies, drained
  • 1 garlic clove, minced
  • 1 red bell pepper, cut into thin strips
  • Shredded lettuce
  • 1/4 c lime juice

Directions
  • Step #1 Combine 1 tbsp oil, lime juice, garlic, cumin & oregano.
  • Step #2 Toss with chicken; marinate at least 30 mins.
  • Step #3 Meanwhile, in a skillet, heat remaining oil on medium-high.
  • Step #4 Saute onion 2 mins.
  • Step #5 Drain chicken, reserving marinade.
  • Step #6 Add chicken to skillet; stir-fry until it begins to brown.
  • Step #7 Add red pepper, chilies & marinade; cook 2 mins.
  • Step #8 Stir in almonds.
  • Step #9 Serve as soon as possible over shredded lettuce & top this with tomatoes & avocado.
