Christmas Rocks Recipe

Ingredients
  • 1 tsp ground cinnamon
  • 1 tbsp strong brewed coffee
  • 1 c butter
  • 1/4 c candied cherries
  • 1/2 tsp ground allspice
  • 1/4 lb candied pineapple, coarsely sliced
  • 1/2 tsp ground ginger
  • 1/4 lb pitted dates
  • 1 c raisins
  • 1 tsp ground mace
  • 3 c all-purpose flour
  • 1/4 lb sliced candied citron
  • 1 tsp ground nutmeg
  • 1/2 c currants
  • 3 eggs
  • 1 tbsp unsweetened cocoa powder
  • 1/4 lb sliced candied orange peel
  • 3/4 tsp baking soda
  • 1 lb pecan halves
  • 1 1/2 c white sugar

Directions
  • Step #1 Cream butter & sugar until light & fluffy.
  • Step #2 Beat eggs until foamy, add to mixture.
  • Step #3 Sift flour with spices, cocoa & soda.
  • Step #4 Save out 1/2 c of flour mixture.
  • Step #5 Add the rest of flour mixture to butter mixture.
  • Step #6 Stir in coffee.
  • Step #7 Cut fruits into small slivers & dredge fruit & sliced pecans lightly in flour saved out for this.
  • Step #8 Add to fruit & the rest of flour to batter, mixing thoroughly.
  • Step #9 Preheat oven to 325F degrees F (170 degrees C).
  • Step #10 Grease cookie sheets.
  • Step #11 Drop by tsp onto cookie sheet.
  • Step #12 Do not place too close together.
  • Step #13 Bake for 12 to 15 mins.
  • Step #14 Do not over-brown.
  • Step #15 Store cookies in jars.
