Curried Pea Soup Recipe

Ingredients
  • fresh mint
  • 1/2 c whipping cream
  • 1 tsp chicken bouillon granules
  • 1/2 c milk
  • 1 garlic clove, minced
  • 1/2 tsp curry powder
  • 1/8 tsp dried mint flakes
  • 1 (10 oz) package frozen peas
  • 1/2 c water
  • 2 tbsps lemon juice
  • 1 celery rib, finely sliced
  • 1/4 tsp salt
  • 1/8 tsp white pepper

Directions
  • Step #1 In a saucepan, garlic, salt, bring water, curry powder, bouillon, pepper & mint to a boil.
  • Step #2 Stir in peas & celery.
  • Step #3 Return to a boil.
  • Step #4 Reduce heat; cover & let simmer for 6-8 mins or until peas & celery are tender.
  • Step #5 Cool slightly.
  • Step #6 Place pea mixture & milk in a mixer or food processor/blender; cover & process until smooth.
  • Step #7 Return to saucepan.
  • Step #8 Stir in cream; heat through (do not boil).
  • Step #9 Stir in lemon juice.
  • Step #10 Garnish with fresh mint if desired.
