Chocolate Zucchini Roll Recipe

Ingredients
  • 1 c confectioners' sugar
  • 2 tsps vanilla extract
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 c all-purpose flour
  • 1 (8 oz) package cream cheese, softened
  • 3/4 c sugar
  • 1/4 c butter or margarine, softened
  •  
  • Additonal confectioners' sugar
  • 1 tsp ground cinnamon
  • 1/2 c baking cocoa
  • 1/4 tsp salt
  • 1 c shredded peeled zucchini
  • FILLING:
  • 1 tsp baking soda

Directions
  • Step #1 In a mixing bowl, beat eggs & vanilla.
  • Step #2 Combine flour, cocoa, baking soda, sugar, cinnamon & salt; add to egg mixture & mix well.
  • Step #3 (batter will be thick).
  • Step #4 Stir in zucchini.
  • Step #5 Spread into a greased & waxed paper-lined 15-in.
  • Step #6 x 10-in.
  • Step #7 x 1-in.
  • Step #8 baking pan.
  • Step #9 Bake at 350 degrees F for 10-15 mins or until cake springs back when lightly touched.
  • Step #10 Turn onto a linen towel dusted with confectioners' sugar.
  • Step #11 Peel off waxed paper & roll up, jelly-roll style, starting with a short side.
  • Step #12 Cool on a wire rack.
  • Step #13 In a mixing bowl, beat cream cheese, butter & vanilla until fluffy.
  • Step #14 Beat in confectioners' sugar.
  • Step #15 Unroll cake; spread filling to within 1 in.
  • Step #16 of edges.
  • Step #17 Roll up again; dust with confectioners' sugar.
  • Step #18 Refrigerate until serving.
