Chicken Potpies Recipe

Ingredients
  • 1/4 c butter or margarine
  • 2 c water
  • 1 (4 oz) can mushroom pieces, drained
  • 1 (2 oz) jar sliced pimiento, drained
  • 3/4 c milk
  • 3 c cubed cooked turkey or chicken
  • 1 (10 oz) package frozen peas & carrots
  • 1/4 tsp ground sage
  • 1/2 tsp salt
  • 1/2 c sliced onion
  • 1/3 c all-purpose flour
  • 1/8 tsp pepper
  • 3 cubes chicken bouillon, crumbled
  • 1/4 c sliced fresh parsley
  • pastry for double-crust pie

Directions
  • Step #1 Cook frozen vegetables according to package directions.
  • Step #2 Drain.
  • Step #3 In a saucepan, melt butter over med-heat/flame; saute onion & mushrooms until tender.
  • Step #4 Stir in flour, salt, pepper & sage.
  • Step #5 Combine milk, bouillon & water.
  • Step #6 Slowly pour this into saucepan, stirring constantly.
  • Step #7 Cook & stir until mixture boils.
  • Step #8 Reduce heat & let simmer 2 mins.
  • Step #9 Stir in chicken, pimiento & parsley.
  • Step #10 Spoon into six individual casseroles.
  • Step #11 Roll & cut pastry into circles 1 in.
  • Step #12 smaller than top of casseroles.
  • Step #13 Place atop of filling.
  • Step #14 Bake at 425F degrees F for 12-15 mins or until crust is lightly browned.
