Chicken Pasta Primavera Recipe

Ingredients
  • 2 tbsps olive oil
  • 1 (10 oz) can sliced tomatoes with green chile peppers
  • 4 skinless, boneless chicken breast halves - cut into bite size pieces
  • 1 lb angel hair pasta
  • 1 yellow bell pepper, cut into 1 inch pieces
  • 2 tbsps butter
  • 2 cloves garlic, minced
  • 1/2 tsp dried rosemary
  • 1/2 tsp garlic powder
  • 1/4 c grated Parmesan cheese
  • 1 red bell pepper, cut into 1 inch pieces
  • 1/2 tsp dried thyme
  • 1 (14.5 oz) can peeled & sliced tomatoes
  • 2 tbsps olive oil
  • 1 green bell pepper, cut into 1 inch pieces
  • 1/2 tsp dried basil

Directions
  • Step #1 In a large skillet over med-heat/flame, cook red, yellow & green bell peppers in 2 tbsps olive oil with garlic until just tender.
  • Step #2 Stir in sliced tomatoes & sliced tomatoes with chiles, reduce heat to medium-low & let simmer 10 mins.
  • Step #3 Remove to a serving bowl.
  • Step #4 Bring a large pot of lightly salted water to a boil.
  • Step #5 Add pasta & cook for 8 to 10 mins or until al dente; drain.
  • Step #6 While pasta is cooking, heat 2 tbsps oil & butter over med-heat/flame in a large skillet.
  • Step #7 Cook chicken in butter mixture until juices run clear, 5 to 10 mins.
  • Step #8 Place cooked chicken over tomato sauce & sprinkle with basil, thyme, rosemary, garlic powder & Parmesan.
  • Step #9 Serve with cooked pasta.
