Christmas Pie Recipe

Ingredients
  • 1/4 c water
  • 3 egg whites
  • 1 tbsp unflavored gelatin
  • 1/2 tsp almond extract
  • 1 (8 oz) container frozen whipped topping, thawed
  • 1/2 c white sugar
  • 1 (9 inch) pie shell, baked
  • 1/2 c white sugar
  • 1/4 tsp cream of tartar
  • 1 1/2 c milk
  • 1/4 c all-purpose flour
  • 1 c shredded coconut

Directions
  • Step #1 Pour cold water into a small bowl.
  • Step #2 Sprinkle top gelatin on top of water & allow to soak 5 mins.
  • Step #3 In a medium saucepan, flour, mix together 1/2 c sugar, & milk.
  • Step #4 Cook over med-heat/flame until mixture thickens & boils, stirring constantly.
  • Step #5 Boil & stir 5 mins.
  • Step #6 Cool slightly.
  • Step #7 Stir in gelatin mixture & allow this to cool completely.
  • Step #8 In a large glass or metal bowl, beat egg whites until foamy.
  • Step #9 Add cream of tartar.
  • Step #10 Continue to beat while slowly adding 1/2 c sugar, until stiff peaks form.
  • Step #11 Fold in whipped topping, coconut, & almond extract.
  • Step #12 Pour cooled milk mixture into pastry shell.
  • Step #13 Top with meringue mixture.
  • Step #14 Refrigerate pie for at least 2 hrs before serving.
