Ingredients
1/4 c water
3 egg whites
1 tbsp unflavored gelatin
1/2 tsp almond extract
1 (8 oz) container frozen whipped topping, thawed
1/2 c white sugar
1 (9 inch) pie shell, baked
1/2 c white sugar
1/4 tsp cream of tartar
1 1/2 c milk
1/4 c all-purpose flour
1 c shredded coconut
Directions
Step #1 Pour cold water into a small bowl.
Step #2 Sprinkle top gelatin on top of water & allow to soak 5 mins.
Step #3 In a medium saucepan, flour, mix together 1/2 c sugar, & milk.
Step #4 Cook over med-heat/flame until mixture thickens & boils, stirring constantly.
Step #5 Boil & stir 5 mins.
Step #6 Cool slightly.
Step #7 Stir in gelatin mixture & allow this to cool completely.
Step #8 In a large glass or metal bowl, beat egg whites until foamy.
Step #9 Add cream of tartar.
Step #10 Continue to beat while slowly adding 1/2 c sugar, until stiff peaks form.
Step #11 Fold in whipped topping, coconut, & almond extract.
Step #12 Pour cooled milk mixture into pastry shell.
Step #13 Top with meringue mixture.
Step #14 Refrigerate pie for at least 2 hrs before serving.
