Chinese Chews Recipe

Ingredients
  • 2 c ground pecans
  • 1/2 tsp salt
  • 4 eggs
  • 2 tsps baking powder
  • 2 c white sugar
  • 1 1/2 c cake flour
  • 1/2 c confectioners' sugar
  • 2 c pureed dates

Directions
  • Step #1 Preheat oven to 350 degrees F (180 degrees C).
  • Step #2 Mix dry ingredients except confectioner's sugar.
  • Step #3 Add nuts & dates.
  • Step #4 Then add eggs which have been lightly beaten.
  • Step #5 Mix well.
  • Step #6 Press mixture into ungreased cookie sheet as thin as possible.
  • Step #7 Bake for 15-20 mins.
  • Step #8 Cut into 1 -2 inch squares while hot.
  • Step #9 Roll into balls as soon as the squares are cool enough to handle then roll in confectioner's sugar.
  • Step #10 Allow to cool completely before eating.
