Cream Of Tomato Soup With Pesto Recipe

Ingredients
  • 1 c half-and-half cream
  • 2 tbsps basil pesto
  • 1 (14.5 oz) can sliced tomatoes with garlic & onion
  • 1 (32 fluid oz) container chicken broth
  • salt & pepper to taste
  • 1 (14.5 oz) can sliced tomatoes with juice

Directions
  • Step #1 Pour chicken broth into a large saucepan, & bring to a boil.
  • Step #2 Boil until reduced by about 1/3.
  • Step #3 Pour in both cans of the tomatoes, & return to a simmer.
  • Step #4 Pour in the half-and-half, & turn heat to low.
  • Step #5 Simmer for 15 mins.
  • Step #6 Puree in batches in a mixer, or use an immersion mixer in the pan.
  • Step #7 Spice up with salt & pepper to taste.
  • Step #8 Ladle into bowls, & swirl in a spoonful of pesto before serving.
