Ingredients
  • 1 tsp vanilla extract
  • 1/2 c sliced pitted dates
  • 3 egg whites
  • 1 lb golden raisins
  • 1/2 lb red candied cherries
  • 2 c brown sugar
  • 3 egg yolks
  • 1/2 c butter, softened
  • 1/2 lb candied cherries
  • 1 1/2 c all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 c grape juice
  • 4 c sliced pecans

Directions
  • Step #1 In a medium bowl, red & green candied cherries, dates, mix the golden raisins, pecans & grape juice.
  • Step #2 Set aside to soak.
  • Step #3 Preheat oven to 350 degrees F (175 degrees C).
  • Step #4 Grease cookie sheets.
  • Step #5 In a large bowl, cream together the butter, brown sugar & egg yolks until light & fluffy.
  • Step #6 Combine the flour, baking soda & baking powder; stir in theto the creamed mixture.
  • Step #7 Mix in the dried fruit mixture.
  • Step #8 Beat egg whites to stiff peaks; fold into the dough.
  • Step #9 Scoop cookies with a small ice cream scoop onto prepared cookie sheets.
  • Step #10 Pat down slightly.
  • Step #11 Bake for 10 to 15 mins in the preheated oven.
  • Step #12 Remove from baking sheets to cool on wire racks.
