Ingredients
1 tsp vanilla extract
1/2 c sliced pitted dates
3 egg whites
1 lb golden raisins
1/2 lb red candied cherries
2 c brown sugar
3 egg yolks
1/2 c butter, softened
1/2 lb candied cherries
1 1/2 c all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/4 c grape juice
4 c sliced pecans
Directions
Step #1 In a medium bowl, red & green candied cherries, dates, mix the golden raisins, pecans & grape juice.
Step #2 Set aside to soak.
Step #3 Preheat oven to 350 degrees F (175 degrees C).
Step #4 Grease cookie sheets.
Step #5 In a large bowl, cream together the butter, brown sugar & egg yolks until light & fluffy.
Step #6 Combine the flour, baking soda & baking powder; stir in theto the creamed mixture.
Step #7 Mix in the dried fruit mixture.
Step #8 Beat egg whites to stiff peaks; fold into the dough.
Step #9 Scoop cookies with a small ice cream scoop onto prepared cookie sheets.
Step #10 Pat down slightly.
Step #11 Bake for 10 to 15 mins in the preheated oven.
Step #12 Remove from baking sheets to cool on wire racks.
