Cream Of Garlic Soup Recipe

Ingredients
  • 1/2 c peeled & cubed potatoes
  • 1 c heavy whipping cream
  • 3 tbsps olive oil
  • 2 1/2 c chicken broth
  • 3/4 c garlic cloves, peeled
  • 2 1/2 c milk
  • 1 c white wine
  • salt & pepper to taste

Directions
  • Step #1 Chop garlic in a food processor/blender to a coarse paste, stopping every once in awhile to scrape the sides of the bowl.
  • Step #2 Heat oil in a large saucepan over low heat/flame.
  • Step #3 Add the garlic paste & cook just until the paste begins to color, stirring constantly.
  • Step #4 Stir in the chicken broth & wine.
  • Step #5 Bring mixture to a boil.
  • Step #6 Reduce heat & let simmer for 30 mins.
  • Step #7 Stir in the milk, cream & potato & let simmer for another 30 mins.
  • Step #8 Puree soup in mixer, return to saucepan & let simmer.
  • Step #9 Add salt & pepper to taste.
  • Step #10 Ladle into bowls & serve this with buttered French bread.
