Chicken With Lemon Sauce Recipe

Ingredients
  • 3/4 tsp salt, divided
  • 2 tbsps butter, divided
  • 2 eggs
  • 1 tbsp olive oil
  • 1/2 c apple juice
  • 5 tsps all-purpose flour, divided
  • 1/2 tsp pepper, divided
  • 1/4 c grated Parmesan cheese
  • 3/4 c chicken broth
  • 1 tbsp lemon juice
  • 1 tbsp minced fresh parsley
  • 2 boneless, skinless chicken breasts, halved

Directions
  • Step #1 Flatten chicken to 1/4-in.
  • Step #2 thickness.
  • Step #3 In a shallow bowl, mix 4 tbsps flour, Parmesan cheese, 1/2 tsp salt & 1/4 tsp pepper.
  • Step #4 In another bowl, beat the eggs.
  • Step #5 Dip chicken into eggs; coat with flour mixture.
  • Step #6 In a large skillet, cook chicken in 1 tbsp butter & oil over med-heat/flame for 3-5 mins on each side or until juices run clear.
  • Step #7 Remove & keep warm.
  • Step #8 In a small bowl, mix the remaining flour, salt & pepper; stir in the broth until smooth.
  • Step #9 Add apple juice to the skillet, stirring to loosen any browned bits.
  • Step #10 Stir broth mixture & add to the pan.
  • Step #11 Bring to a boil; cook & stir for 1-2 mins or until thickened & bubbly.
  • Step #12 Stir in lemon juice; cook for 1 min.
  • Step #13 Add parsley & remaining butter; cook & stir until butter is melted.
  • Step #14 Serve over chicken.
