Don Struble's Puerto Rican Pork Roast Recipe

Ingredients
  • 3/4 c water
  • 2 tbsps Worcestershire sauce
  • 1 dash hot pepper sauce
  • 3 lbs bone-in pork roast
  • 4 cloves garlic, sliced
  • salt & pepper to taste
  • 1 (5 oz) jar stuffed green olives
  • 3 oz sliced pepperoni sausage

Directions
  • Step #1 Rub the roast all over with salt & pepper, hot pepper sauce & Worcestershire sauce.
  • Step #2 Let marinate in the refrigerator for 30 mins.
  • Step #3 Preheat oven to 350 degrees F (175 degrees C).
  • Step #4 Using a small boning knife, carefully poke holes about 1 inch deep & 1 inch apart all over the roast.
  • Step #5 While making each cut twist the knife & insert a drop of hot sauce, wedge of pepperoni, garlic sliver & one olive into each cut.
  • Step #6 Place roast in a roasting pan & pour in the water.
  • Step #7 Bake at 350 degrees F (175 degrees C) for about 30 mins per lb or until an internal temperature of 160 degrees F (70 degrees C) is met.
  • Step #8 Remove from oven, tent with foil & let roast stand for 10 mins before carving.
