Step #1
Preheat oven to 350 degrees F (175 degrees C).
Step #2 Grease a 15x10-inch jelly roll pan.
Step #3 Line with waxed paper.
Step #4 Grease paper.
Step #5 Sift together flour, cocoa, baking powder, & salt.
Step #6 Beat together sugar & egg yolks at high speed until light & fluffy.
Step #7 At lowish speed, alternately beat milk & flour mixture into egg mixture.
Step #8 Using clean beaters, but not dry, beat egg whites at high speed until stiff, peaks form.
Step #9 Fold one third of beaten whites into batter.
Step #10 Fold in remaining whites.
Step #11 Spread batter in prepared pan; smooth top.
Step #12 Bake cake at 350 degrees F (175 degrees C) until set, 12 mins.
Step #13 Dust a clean cloth with confectioners' sugar.
Step #14 Turn cake out onto prepared cloth.
Step #15 Remove waxed paper.
Step #16 Trim cake edges.
Step #17 Starting with a long side, roll up cake, jelly-roll style.
Step #18 Transfer, seam-side down, to a wire rack to cool for 30 mins.
Step #19 Unroll cake; remove cloth.
Step #20 Spread whipped cream over cake to within 1 inch of edges.
Step #21 Re-roll cake.
Step #22 Place, seam-side down, on serving plate.
Step #23 To prepare frosting, in a small saucepan, & butter to a boil over med-heat/flame, bring heavy cream, melted chocolate, stirring vigorously until mixed.
Step #24 Remove from heat.
Step #25 Let stand until set.
Step #26 Spread frosting over top & sides of cake.
Step #27 To prepare garnish, dust work surface with confectioners' sugar.
Step #28 Knead food coloring into marzipan until mixed.
Step #29 Using a rolling pin dusted with confectioners' sugar, roll marzipan to a 1/8-inch thickness.
Step #30 Using a small knife, cut out leaves.
Step #31 Arrange leaves, cinnamon candies, & snowmen on top of cake & around plate.
