Ingredients
  • 1 (2 to 3 lb) whole chicken, cut into pieces
  • freshly ground black pepper
  • 1/4 c all-purpose flour
  • 2 large carrots, sliced
  • 1 tsp salt
  • 2 stalks celery, finely sliced
  • 1 lb biscuit baking mix
  • 5 large potatoes, peeled & sliced

Directions
  • Step #1 Put chicken pieces in a large pot over med-heat/flame, & add enough water to cover 3 inches over the chicken.
  • Step #2 Add the salt, pepper, carrots, celery, celery & potatoes.
  • Step #3 Bring to a boil & let simmer for 40 mins.
  • Step #4 In a mixing bowl, prepare biscuit mix according to package directions.
  • Step #5 After simmering soup for 40 mins, drop rounded tbspfuls of the biscuit mixture into the pot & let them cook a bit between additions of dumplings, so that they do not stick together.
  • Step #6 With a wire whisk, mix together about 1 1/2 c of water with the flour, then add flour mixture to the soup pot until the broth has the consistency of gravy.
