Crab Couscous Salad Recipe

Ingredients
  • 1/4 c sliced green onions
  • 1 1/2 c sliced peeled mango
  • 2 c vegetable broth
  • 1/4 c lemon juice
  • 8 oz couscous
  • 1 1/2 lbs imitation crabmeat, coarsely sliced
  • 6 tbsps olive oil
  • 1/4 tsp ground cumin
  • 1 c quartered cherry tomatoes
  • 1 tbsp butter

Directions
  • Step #1 In a saucepan, bring the broth & butter to a boil.
  • Step #2 Stir in the couscous.
  • Step #3 Remove from the heat; cover & let this stand for 5 mins.
  • Step #4 Transfer to a large bowl; cool to about room temp.
  • Step #5 Fluff with a fork.
  • Step #6 For dressing, in a small bowl, mix the oil, lemon juice & cumin.
  • Step #7 Add the crab, mangoes, tomatoes & onions to couscous.
  • Step #8 Drizzle with dressing & toss to coat.
