Confetti Salad By Jean Carper Recipe

Ingredients
  • 1 (11 oz) can mandarin oranges, drained
  • 3 tbsps extra virgin olive oil
  • 2 tbsps balsamic vinegar
  • 1 (19 oz) can white (cannellini) beans, drained & rinsed
  • 1/3 c walnuts, toasted
  • 2 c red cabbage, shredded
  • 2 tbsps orange juice
  • 2 large scallions, sliced, with green tops
  • Salt & pepper, to taste

Directions
  • Step #1 Put first five ingredients in a bowl.
  • Step #2 Whisk together oil, vinegar, juice.
  • Step #3 Toss all.
  • Step #4 Serve.
