Chicken Tetrazzinii Recipe

Ingredients
  • 1 pinch paprika
  • 1/2 c butter
  • 3/4 (12 oz) package egg noodles, cooked & drained
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1/3 c dry sherry
  • 8 oz processed cheese food (eg. Velveeta)
  • 1 stalk celery
  • 2 skinless, boneless chicken breast halves
  • 1 (4.5 oz) can sliced mushrooms
  • 1/4 c cornflakes cereal
  •  
  • 1 (12 fluid oz) can evaporated milk

Directions
  • Step #1 Boil chicken breasts & celery in 4 c of water for about 30 mins.
  • Step #2 Remove from heat & remove chicken from water to cool.
  • Step #3 When chicken is cooled, shred & set aside.
  • Step #4 In a large skillet, melt butter or margarine.
  • Step #5 Drain mushrooms, reserving liquid, & add to skillet.
  • Step #6 Heat thoroughly, seasoning with salt & pepper.
  • Step #7 Add evaporated milk, reserved mushroom liquid & sherry, stirring well.
  • Step #8 Add cheese a few slices at a time until thoroughly melted & mixed.
  • Step #9 Add shredded chicken & bring to a slow boil.
  • Step #10 Preheat oven to 350 degrees (175 C).
  • Step #11 Grease a 9x13x2 glass baking dish.
  • Step #12 Put in noodles at about a 1 1/2 inch depth & pour chicken mixture over noodles.
  • Step #13 Stir to coat.
  • Step #14 Top with cornflake crumbs & paprika, cover dish & bake for 25 mins.
  • Step #15 Uncover dish & bake for 5 more mins.
  • Step #16 Serve warm.
