Chocolate Almond Macaroons Recipe

Ingredients
  • 1 c white sugar
  • 1/8 tsp salt
  • 3/4 c sliced semisweet chocolate
  • 1/4 tsp ground cinnamon
  • 2 c almonds
  • 2 eggs
  • 1/2 tsp almond extract

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Line cookie sheets with parchment paper.
  • Step #3 Finely grind the almonds, sugar, cinnamon & salt in a food processor/blender.
  • Step #4 Separate one of the eggs & add the white, the other egg, & almond extract & process until the mixture holds together.
  • Step #5 Transfer to a bowl & stir in the the chocolate.
  • Step #6 Moisten hands & roll mixture into 1-inch balls.
  • Step #7 Place on prepared cookie sheet.
  • Step #8 Flatten to 1/3-inch thick rounds.
  • Step #9 Bake until tops puff & centers are still soft, about 12 mins.
  • Step #10 Remove to a rack & cool completely.
  • Step #11 Replace parchment paper for next round of cookies.
