Chicken Stew With Coconut Milk Recipe

Ingredients
  • Parsley or cilantro for garnish
  • Salt & pepper to taste
  • 1 tbsp cumin
  • 1 c peeled potatoes, cut in 1-inch chunks
  • 1 c halved baby carrots
  • 1/4 tsp hot sauce (such as Tabasco), or to taste
  • 1 medium yellow onion, sliced or sliced
  • 1 c canned coconut milk
  • 1 c fat-free, reduced-sodium chicken broth
  • 1 lb skinless, boneless chicken breast, cut into bite-sized chunks
  • 1 tbsp curry powder
  • 1 (9 oz) package frozen baby lima beans
  • 1/4 (12 oz) can sliced tomatoes

Directions
  • Step #1 Put all ingredients in a large microwave-safe bowl & mix thoroughly.
  • Step #2 Cover tightly & microwave on high for 30-40 mins.
