Creole Butter Beans Recipe

Ingredients
  • 1 tbsp olive oil
  • 1 tbsp all-purpose flour
  • 1/2 tsp salt
  • 1 (14.5 oz) can sliced tomatoes, undrained
  • 2 garlic cloves, minced
  • 1/2 c sliced onion
  • 1/2 tsp pepper
  • 1/8 tsp hot pepper sauce
  • 1 c water
  • 4 1/2 tsps chili sauce
  • 2 (15 oz) cans butter beans, rinsed & drained
  • 1/4 tsp prepared mustard
  • 1/4 c sliced green pepper
  • 1/4 c sliced celery
  • 2 tbsps brown sugar

Directions
  • Step #1 In a large saucepan, saute the onion, celery, green pepper & garlic in oil until onion is tender.
  • Step #2 Combine the flour, salt & pepper; sprinkle it over onion mixture & stir until well mixed.
  • Step #3 Cook 1 min longer.
  • Step #4 Gradually whisk in water.
  • Step #5 Bring to a boil; cook & stir for 1-2 mins or until thickened.
  • Step #6 Stir in the remaining ingredients.
  • Step #7 Return to a boil.
  • Step #8 Reduce heat; simmer, uncovered, for 15-20 mins.
