Creole Macaroni And Cheese Recipe

Ingredients
  • 1 c andouille sausage, sliced
  • kosher salt to taste
  • 1 1/2 c shredded Cheddar cheese
  • 1 tbsp all-purpose flour
  • 2 stalks celery, sliced
  • 1 onion, sliced
  • 4 tbsps butter
  • 3/4 c bread crumbs
  • 1/2 c grated Parmesan cheese
  • 1/2 tsp paprika
  • 1/2 tsp prepared mustard
  • 1 (8 oz) package elbow macaroni
  • 1 1/2 c milk
  • 1 c grated Gruyere cheese
  • black pepper to taste

Directions
  • Step #1 Cook macaroni in a large pot of boiling water until al dente.
  • Step #2 Drain.
  • Step #3 In a small pan, cook the andouille sausage over med-heat/flame until done.
  • Step #4 Set aside.
  • Step #5 In the same pan, melt 1 tbsp butter over med-heat/flame.
  • Step #6 Add bread crumbs, & stir this to coat.
  • Step #7 Cool, & then mix in Parmesan.
  • Step #8 Set aside.
  • Step #9 In a medium saucepan, melt 1 tbsp butter.
  • Step #10 Saute onions & celery until translucent.
  • Step #11 Transfer to a bowl.
  • Step #12 In the same saucepan, melt 1 tbsp butter over med-heat/flame.
  • Step #13 Whisk in the flour, to make a white roux.
  • Step #14 Try not to let the roux brown at all, it should be white.
  • Step #15 Mix in paprika & mustard, then stir in the milk.
  • Step #16 Bring to boil over med-heat/flame, then add Gruyere & Cheddar cheeses.
  • Step #17 Simmer, stirring often, until thick enough to coat the back of a spoon, about 10 mins.
  • Step #18 Spice up with salt & pepper to taste.
  • Step #19 Preheat the oven to 350 degrees F (175 degrees C).
  • Step #20 Butter a 9x13 in pan, or similar sized casserole dish.
  • Step #21 Transfer cooked macaroni to the dish, & toss in the andouille sausage.
  • Step #22 Stir in the cheese mixture.
  • Step #23 Sprinkle top the breadcrumb & Parmesan mixture evenly over the top.
  • Step #24 Bake for 20 mins, or until crust turns golden brown.
