Chicken Frittata Recipe

Ingredients
  • 2 c shredded sharp Cheddar cheese
  • 6 eggs
  • 1 tbsp butter
  • 1 c cooked, sliced boneless chicken breast half
  • 1 c sliced fresh mushrooms
  • 2 onions, sliced
  • 1 c sliced fresh broccoli
  • 2 c milk
  • 1 c self-rising flour
  • 4 c sliced peeled potatoes
  • 2 tsps crushed garlic

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Place potatoes in a medium saucepan with enough water to cover.
  • Step #3 Bring to a boil, & cook 10 mins, or until tender but firm; drain.
  • Step #4 Melt butter in a medium skillet over med-heat/flame, & saute garlic & onions until tender.
  • Step #5 In a small bowl, mix the flour, milk, & eggs.
  • Step #6 In a medium bowl, flour mixture, mix potatoes, Cheddar cheese, garlic & onions, mushrooms, broccoli, & chicken.
  • Step #7 Transfer to a medium baking dish.
  • Step #8 Bake 25 mins in the preheated oven, or until eggs are no longer runny & top is lightly browned.
