Cornish Pastiesii Recipe

Ingredients
  • 1 lb ground pork
  • 3 tbsps vegetable oil
  • 1 lb lean ground beef
  • 10 green onions, sliced
  • 2 c lard
  • 1 onion, finely sliced
  • 5 carrots, sliced (optional)
  • 1/2 c butter
  • 4 c all-purpose flour
  • 1 c cold water
  • 2 rutabagas, sliced
  • 2 tbsps milk
  • salt & pepper to taste
  • 1 tsp salt

Directions
  • Step #1 To Make Crust: Place flour & salt in a large bowl.
  • Step #2 Mix well, then cut in lard until mixture is crumbly.
  • Step #3 Stir in water, mixing just until dough forms a ball.
  • Step #4 Allow dough to rest in refrigerator while you make filling.
  • Step #5 To Make Filling: Heat a large skillet over medium-high heat.
  • Step #6 Add vegetable oil, then onions.
  • Step #7 If using carrots & rutabagas, add them now.
  • Step #8 Saute vegetables until soft, about 10 mins.
  • Step #9 Add ground beef, ground pork, & green onions to skillet.
  • Step #10 Saute until meat is no longer pink.
  • Step #11 Add salt & pepper to taste.
  • Step #12 Preheat the oven to 400F degrees F (200 degrees C).
  • Step #13 Divide dough into 12 portions & roll out each one to fit a 9-inch pie plate.
  • Step #14 Place a pastry circle in a pie pan.
  • Step #15 Fill one half of pan with meat filling.
  • Step #16 Dot with some of the butter or margarine.
  • Step #17 Pat edge of crust with water, then fold over other half of crust.
  • Step #18 Trim edge, then crimp to seal.
  • Step #19 Make steam vents in top of crust.
  • Step #20 Brush with milk.
  • Step #21 Repeat process until all of dough & all of filling are gone.
  • Step #22 Bake in preheated oven for 45 mins or until crust is golden brown.
