Chicken Biscuit Pie Recipe

Ingredients
  • 5 tbsps shortening
  • 1/2 tsp salt
  • 2 1/2 tsps baking powder
  • 1/4 tsp ground black pepper
  • 1 1/2 c chicken broth
  • 1/3 c butter
  • 2/3 c milk
  • 1 onion, sliced
  • 2 c all-purpose flour
  • 1/3 c all-purpose flour
  • 3/4 tsp salt
  • 1 c frozen green peas
  • 3/4 c milk
  • 2 c cooked, shredded chicken meat
  • 1 c frozen sliced carrots

Directions
  • Step #1 Preheat oven to 450 degrees F (230 degrees C).
  • Step #2 Butter a 2 quart casserole dish.
  • Step #3 In a large saucepan, saute sliced onion in the butter.
  • Step #4 Stir in flour & cook for 1 min.
  • Step #5 Add chicken broth & milk.
  • Step #6 Heat to boiling, stirring constantly.
  • Step #7 Cook for 2 mins.
  • Step #8 Spice up with salt & pepper.
  • Step #9 Add frozen peas & carrots & cooked chicken.
  • Step #10 Pour into buttered 2 quart casserole dish.
  • Step #11 In a medium bowl, mix together 2 c flour, baking powder, & 3/4 tsp salt.
  • Step #12 Cut in shortening until mixture is crumbly.
  • Step #13 Stir in milk just until dough is moistened, then drop by spoonfuls onto chicken mixture.
  • Step #14 Bake at 450 degrees F (230 degrees C) for 12 to 15 mins, or until biscuits are golden brown, & cooked on the bottom.
  • Step #15 This tends to bubble over so I place a piece of aluminum foil under the pan to catch the drips.
