Double Chocolate Biscotti Recipe

Ingredients
  • 1/4 c unsweetened cocoa powder
  • 3/4 c semisweet chocolate chips
  • 1/2 c butter, softened
  • 1 3/4 c all-purpose flour
  • 2/3 c white sugar
  • 4 (1 oz) squares white chocolate, sliced
  • 2 tsps baking powder
  • 2 eggs

Directions
  • Step #1 In a large mixing bowl, cream butter & sugar with an electric mixer until light & fluffy.
  • Step #2 Gradually beat in cocoa & baking powder.
  • Step #3 Beat for 2 mins.
  • Step #4 Beat in the eggs one at a time.
  • Step #5 Stir in flour by hand.
  • Step #6 Mix in white chocolate & chocolate chips.
  • Step #7 Cover dough, & chill for about 10 mins.
  • Step #8 Preheat oven to 375 degrees F (190 degrees C).
  • Step #9 Divide dough into two parts, & roll each part into a 9 inch long log.
  • Step #10 Place logs on lightly greased cookie sheet, about 4 inches apart.
  • Step #11 Flatten slightly.
  • Step #12 Bake for 20 to 25 mins, or until toothpick inserted in center comes out clean.
  • Step #13 Cool on cookie sheet for 5 mins, then carefully transfer to a wire rack to cool for one hr.
  • Step #14 Cut each loaf into 1/2 inch wide diagonal slices.
  • Step #15 Place slices on an ungreased cookie sheet, & bake this at 325F degrees F ( 165 degrees C) for 9 mins.
  • Step #16 Turn cookies over, & bake for 7 to 9 mins.
  • Step #17 Cool completely, then store this in an airtight container.
