Cheesyeggie Soup Recipe

Ingredients
  • 2 c vegetable broth
  • 3/4 c butter
  • 1 onion, sliced
  • 1/2 c sliced carrots
  • 1 tomato, sliced
  • 4 c half-and-half
  • 1/2 c sliced celery
  • 6 tbsps all-purpose flour
  • 1/2 c sliced green pepper
  • 12 oz American cheese, sliced into strips

Directions
  • Step #1 In one pan, melt 1/4 c butter over med-heat/flame.
  • Step #2 Saute the onion, pepper, carrot, celery, & tomato in the melted butter until soft.
  • Step #3 Using a mixer or food processor/blender, puree vegetables with vegetable broth; set aside.
  • Step #4 In a separate pot, melt the remaining 1/2 c butter.
  • Step #5 Slowly whisk in flour, & then stir in the half & half.
  • Step #6 When warm, slowly stir in the cheese until melted.
  • Step #7 Mix in veggie puree, & serve.
