How to make it

  • Soak the alder for at least an hour.
  • Place alder in smoker per instructions.
  • Set fillets on grills and start the cooking process.
  • With my smoker, it takes 45 minutes for the fish to be done.
  • Now, I brush the top side with butter.
  • Sprinkle about 1 teaspoon of the brown sugar evenly on each fillet.
  • Close cover and cook another 5-10 minutes, until sugar dissolves.
  • Serve warm and enjoy
