Chicken Enchilada Casserole Recipe
Linda's old version of Chicken Enchilada Casserole.

Ingredients
  • 4 chicken breasts, cooked and cubed
  • 1-14.75 oz can cream of chicken soup (larger can than normal)
  • 2-4 oz cans of diced green chili (more to taste)
  • 2-3 c. shredded cheddar (sharper the better)
  • 4-8oz sour cream
  • 8-12 small corn tortillas

Directions
  1. 1. Preheat oven to 350 degrees
  2. 2. Combine chicken, soup, and green chilis.
  3. 3. Cover bottom of casserole dish (9"X9") with corn tortillas, place about 1 c of chicken mix, then cover with 1 c. cheese.
  4. 4. Repeat until out of chicken mix.
  5. 5. Bake at 350 for 30-45 minutes, or until bubbly hot and yummy.
  6. 6. Serve on plate covered with sour cream.
