Broccoli Pasta Salad Recipe
This is a nice change from the ordinary side dishes. THe recipe doubles wonderfully for parties.

Ingredients
  • 1 lb. box of spiral pasta cooked according to box instructions.
  • 1/2 bunch of fresh broccoli chopped (use as much as you like )
  • 1 red bell pepper thinly sliced
  • 1/4 C. pitted black olives
  • 4 green onions chopped
  • 2 TBS.fresh basil sliced thinly
  • DRESSING:
  • 1 1/2 C Good extra virgin olive oil
  • 1/4 C red wine vinegar
  • 2 TBS. grey poupon
  • 1 tsp. each pepper and salt
  • 1/2 tsp. sugar
  • 1/2 tsp. fresh lemon juice
  • 1 large clove of garlic minced finely

Directions
  1. Five minutes before the pasta is done add in the broccoli until bright green and al dente.
  2. When the pasta/broccoli is cooked rinse with cold water for one minute. Set aside.
  3. Whisk all the dressing ingredients in a bowl until thoroughly combined. Cover and place in the fridge for 1 hour.
  4. In a large bowl add all the rest of the salad ingredients and toss gently.
  5. Chill in the fridge for 1 hour.
  6. Just before serving, toss the pasta with 1 C of the dressing. Taste and add more dressing to your liking. ENJOY!!
