Ingredients

Italian tuna packed in olive oil-i buy this in bulk at Costco

About a cup of barley- already cooked

grape tomatoes-chopped

capers

black wrinkled olives-pitted and roughly chopped

baby arugula

lemon juice

extra virgin olive oil

salt

freshly cracked black pepper

Directions

Mix all ingredients in a bowl and toss gently.

*Add as much or as little as you like of each, according to personal preference-ie: if you like salty, add more capers or even some caper juice!

Serve with a couple of pieces of whole wheat crisp bread
