Thai Fish Salad Recipe

Ingredients
  • 2 table spoons of sesame oil
  • 1 tablespoon of finely chopped chillis
  • 1 tablespoon of finely chopped garlic
  • 1 tablespoon of grated ginger
  • 2 limes
  • 2 handfulls of coriander leaf (cilantro)
  • 2 fillets of firm white fish, sole is best
  • Mirin of Sake
  • 1 punnet of cherry tomatoes
  • 1 packet of 4 leaf mix (lettuce, must contain strong flavours, oak leaf and chickory)

Directions
  1. chop up chillis, garlic and prepare ginger
  2. pull the leaves of the cilantro
  3. Cut fish into bite sized pieces
  4. slice tomatoes in half
  5. heat sesame oil in a wok, to boiling, do not burn
  6. add chillis and stir around till colour moves into the oil
  7. add garlic and ginger
  8. immediately add fish and cook through
  9. add a couple of splashes of sake or mirin rice wine
  10. place a couple of handfulls of lettuce in 2 bowls, mix in a quarter of the cilantro into each bowl
  11. add 1/2 of cilantro to the wok with the tomatoes, stir while cooking for 1 minute
  12. spoon fish and tomatoes onto the lettuce
  13. eat immediately, tomatoes should be warm but still firm
  14. best will a chilled japanese beer or a french of nz sauv blanc
  15. Can also add mint or basil and slices of chillis as a garnish
