Mediterranean Chicken

MEDITERRANEAN CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Benson Estate in Canton, Texas in 1987.
Ingredients
- 1/2 cup mayonnaise shopping list
- 1/4 cup chopped fresh parsley shopping list
- 1/4 cup lemon juice shopping list
- 2 tablespoons dry white wine shopping list
- 2 teaspoons dried oregano leaves shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 2 cloves garlic minced shopping list
- 3 pounds bone in skinless chicken pieces shopping list
How to make it
- Combine all ingredients except chicken in large bowl then add chicken and toss to coat.
- Cover and refrigerate at least 4 hours or overnight to marinate.
- Remove chicken from marinade and discard marinade.
- Place chicken in shallow baking pan then bake 55 minutes.
