Ingredients
  • 4 large scallops with shells
  • 3 oz dry white wine
  • 1.4 pint water
  • 4 oz mushrooms
  • 1 oz butter
  • 1 oz plain flour
  • little cream
  • small quantity of mashed potatoes
  • piping bag with rose nozzle
  • parmesan cheese

Directions
  1. put scallops,wine,water and seasoning. cook gently for 5 minutes
  2. remove scallops. boil stock and reduce to half. fry mushroom in butter until soft. add flour and stir in stock.simmer gently until stock thickens. cut scallops and mushrooms iin small pieces. add to sauce. heat gently add cream. take off heat.
  3. lightly grease scallop shells. devide scallop mixture equally among the 4 shells. put mashed potatoes in the piping bag. squeeze potatoes mash around the eadge of eachshell. sprinkle with the
  4. parmesan cheese. place under grill and cook for 4-5 minutes.
  5. or till piping hot....avoid getting them burned
