How to make it

  • Lightly butter a square cake pan and dust with flour.
  • Preheat the oven on 180C.
  • Beat the eggs in a bowl, adding sugar.
  • Beat the egg mixture until foamy.
  • Grate lemon rind and add it to the mixture.
  • Sift flour with baking powder, then add it to the mixture and fold with a wooden spoon.
  • Fold in melted butter or oil one-third at a time, pouring over wooden spoon.
  • Pour batter into prepared cake pan and bake for about 30min.
  • After the cake is done, cool it on a wire rack, then sprinkle with confectioners'sugar.
