This is a simple cake which can be served with an afternoon tea.

Ingredients
  • 3 large eggs
  • 1 cup and 2 tablespoons sugar
  • 1 lemon rind
  • 1 and 2/5 cups flour
  • 2/3 teaspoon baking powder
  • 4/5 cup butter or oil
  • Confectioners'sugar for decorating

Directions
  1. Lightly butter a square cake pan and dust with flour.
  2. Preheat the oven on 180C.
  3. Beat the eggs in a bowl, adding sugar.
  4. Beat the egg mixture until foamy.
  5. Grate lemon rind and add it to the mixture.
  6. Sift flour with baking powder, then add it to the mixture and fold with a wooden spoon.
  7. Fold in melted butter or oil one-third at a time, pouring over wooden spoon.
  8. Pour batter into prepared cake pan and bake for about 30min.
  9. After the cake is done, cool it on a wire rack, then sprinkle with confectioners'sugar.
