Finally got to talk to chef at the marriot who let me watch while he prepared this soup, had to work it out myself though - tastes something like it - if someone can get the broth clear, let me know lol

Ingredients
  • 1kg of ox tail sliced into 2 inch pieces
  • 2 litres of beef stock
  • 2 table spoons of sesame oil
  • 2 leeks, cut into 1 cm piece
  • 1 onion
  • 2 garlic cloves sliced
  • 6 chillis
  • grape tomatoes

Directions
  1. Cook the ox tail pieces on a bbq grill, reduce as much of the fat as you can, get the ox tail bbq'ed well, it adds to the flavour
  2. Meanwhile in a large pot cook the onion and garlic in some sesame oil
  3. chop one chilli finely and leave the seeds in
  4. Cook till oil has the red tinge
  5. Add the 2 litre of beef stock
  6. Place in the leeks and ox tail and 2 more sliced chillis
  7. Put on low heat, or into a crockpot and cook until the tail meat is tender and falls off the bone
  8. There'll be alot of fat on top, i decant this off with a ladle, but alot of the flavour is there, so choose, health or flavour
  9. Add 3 more sliced chillis once cooked
  10. Add sliced grape tomato, as you serve and if you want more substance, add some dumplings or wontons
  11. A lighter red, merlot or grenache is good with this

To make the broth clear, cook the meat on the presure cooker 3 time and change the water every time, the ladt want will make non greasy clear broth, less fat too so its more healty, hope this help
