Orange Scones With Raspberry Filling Recipe
ORANGE SCONES WITH RASPBERRY FILLING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Truman Estate in Midlothian, Texas in 1987.

Ingredients
  • 3-1/4 cup all purpose flour
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons butter
  • 3 eggs beaten
  • 1/2 cup whipping cream
  • 1 tablespoon grated orange peel
  • 3 tablespoons raspberry preserves
  • Powdered sugar

Directions
  1. Mix flour, sugar, baking powder and salt then cut in butter until mix resembles coarse crumbs.
  2. Beat eggs, cream and orange peel then add to flour mixture and mix just until moistened.
  3. Shape dough into a ball then knead 10 times on lightly floured surface then divide into 2 pieces.
  4. Roll out each piece into a rectangle then spread 1 rectangle with preserves.
  5. Top with remaining rectangle then cut into 8 squares then cut each in half diagonally.
  6. Place on lightly greased cookie sheet then bake 14 minutes and sprinkle with powdered sugar.
