Zucchini Soup Recipe
This vegetable soup is perfect for a winter evening!

Ingredients
  • 3 1/2 c. of diced zucchini
  • 1/2 c. of chopped celery
  • 1 c. of diced carrots
  • 1/2 c. of diced onion
  • (10.75 oz.) can of condensed cream of mushroom soup
  • 1 1/4 c. of water
  • 2 cubes of chicken bouillon
  • 1/2 c. of dry white wine (optional)
  • 1/2 c. of sour cream
  • 1/2 c. of margarine
  • 1 tbsp. of all-purpose flour
  • 1 3/4 c. of milk

Directions
  1. First, in a large pot you wan to saute the zucchini, celery, carrots, and the onion(approx 20 min.)
  2. Then in a small bowl you want to combine the flour and milik.
  3. You want to keep mixing, once creamy, you can add back to soup.
  4. Next you want to puree this mixture in a blender until smooth.
  5. Then add pureed mixture to pot adding cream of mushrom soup, water, bouillon cubes and the sour cream.
  6. White wine can also be added if desired.
  7. Let this heat thorougly and ladle and serve!
