Chicken with carrots and Onions

- 2 meduim whole chickens shopping list
- 4 carrots (cut in half then in slants) shopping list
- 3 red onions (cut in half then in slants) shopping list
- 2 cloves garlic (cut into small cubes) shopping list
- vegetable oil shopping list
- salt, black pepper, basil, cardamom, and bay leaves shopping list
- fresh dill (finely chopped) shopping list
How to make it
- Cut each chicken to 8 pieces (do not remove the skin).
- Clean the chicken from excess grease and skin, put some vinegar on them to get rid of the bad smell and leave them soaked in vinegar for 5 min.
- After 5min, wash all the vinegar off the chicken and add some salt, black pepper, and basil and mix.
- Heat some vegetable oil in a pan, put the chicken pieces inside and fry both sides of the chicken on high temperature until golden.
- Transfer the chicken to another pot .
- In the same oil, fry the carrots until golden, then fry the onions and garlic with the carrots until golden.
- Transfer fried vegetables to the top of the chicken.
- Add water until half the pot, add cardamom and bay leaves and leave to boil.
- Cook for 30min.
- After cooked fresh dill on top.
- Served with pasta or rice.
