Cotiga Cheesy Potatoes Recipe

How to make it

  • Wash potatoes then wrap in foil and bake 1 hour at 400.
  • Upon removing potatoes from oven cut in half.
  • Scrape out center of potatoes into rectangular baking dish.
  • Shred cheese and spread evenly over potatoes.
  • Beat eggs together and pour evenly over entire dish.
  • Bake at 350 for 45 minutes.
