Cotiga Cheesy Potatoes

COTIGA CHEESY POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Byrd Estate in Cedar Hill, Texas in 1993.
Ingredients
- 6 potatoes shopping list
- 15 ounce container fresh salsa shopping list
- 2 cups cotiga cheese shopping list
- 3 eggs shopping list
How to make it
- Wash potatoes then wrap in foil and bake 1 hour at 400.
- Upon removing potatoes from oven cut in half.
- Scrape out center of potatoes into rectangular baking dish.
- Shred cheese and spread evenly over potatoes.
- Beat eggs together and pour evenly over entire dish.
- Bake at 350 for 45 minutes.
