Ingredients

How to make it

  • Cook your choice of tortalini and put it to the side (im sure im butchering tortalini?)
  • Scoop out a large Advacado and smash it into a paste with a fork.
  • Use a large non-stick skillet and melt half a stick of butter (im in the south;)
  • Reduce heat to medium and add a small container of whipping cream, (NOT the sweet stuff, its the creamer kind )the smasked advacado and stir constantly while sippin on the open bottle of red wine until smooth (the sauce that is;)
  • Once the sauce is smoothed out add red wine to taste (unless you gotta drinking problem) then it would be about 3/4 cup.
  • Add your choice of cheese slowly until the sauce is slightly thick to your choice. Dont over do it tho. It thickens on standing.
  • In another non-stick, add a tablespoon of olive oil and bring to medium/high heat and add the tortalini. Your kinda deep frying it to give it a slight crisp texture.
  • Put the tort on a plate, top with the Advacado sauce, and a dusting of Parmesan Bread Dip seasoning. No need to add anything else!
  • (I make a big plate of cheap frozen Texas Toast for the side)

    They say cook with what ever wine you like. But I never see them use Mad Dog 20/20 on the food network. :) sounds really good.
