How to make it

  • Mix dry ingredients
  • Add water
  • Knead until smooth
  • Let rise 12-14hrs (this is a good overnight recipe, though I've prepped in the morning and baked in the afternoon with only 6hrs)
  • Place Dutch oven(no cover) in oven and heat to 450.
  • Tuck dough under and shadow into a ball, place on parchment paper.
  • Remove Dutch oven and add a layer of rice to the bottom to prevent bread from burning, and parchment with dough into Dutch oven and cover with lid.
  • Bake for 30 min
  • Remove lid and bake another 10min
  • Remove and cool completely on cooling rack.
