I've made this recipe a many times in the past months (can you tell I liked it?). Each time I tried a slightly different variation. Above is what I finally came up with.

  • 1 9 inch double butter pie crust recipe
  • 4 cups fresh blackberries
  • 1/2 cup white sugar
  • 1/2 cup tapioca flour
  • 2 tablespoons milk
  • 1/4 cup white sugar

Directions
  1. Brush part of an egg on the bottom of the pie shell before adding the berries so that the bottom will not become soggy.
  2. Combine 3 1/2 cups berries with the sugar and flour. Spoon the mixture into an unbaked pie shell.
  3. Add a tablespoon or two of cold butter chopped up and sprinkled over the berries.
  4. Spread the remaining 1/2 cup berries on top of the sweetened berries, and cover with the top crust. Seal and crimp the edges.
  5. Brush the top crust with milk, and sprinkle with 1/4 cup sugar.
  6. Bake at 425 degree F (220 degrees C) for 15 minutes. Reduce the temperature of the oven to 375 degrees F (190 degrees C), and bake for an additional 20 to 25 minutes.
