Hummingbird Cupcakes with Orange Pecan Frosting

- 1 1/4 cups flour shopping list
- 1 tsp. baking powder shopping list
- 1 tsp. cinnamon shopping list
- 3/4 cup sugar shopping list
- 1/2 cup (1 stick) margarine, melted shopping list
- 2 tsp. vanilla shopping list
- 2 eggs shopping list
- 2 bananas, mashed shopping list
- 1/2 cup crushed pineapple, drained shopping list
- 1/2 cup unsweetened desiccated coconut shopping list
- 1 package cream cheese, softened shopping list
- 1 stick sweet cream butter, softened shopping list
- 1 cup confectioners sugar shopping list
- 3 tablespoons orange juice shopping list
- 1/4 cup finely chopped pecans shopping list
How to make it
- Preheat oven to 350 degrees.
- Place 12 baking cups in a muffin tin.
- Combine dry ingredients (flour, baking powder, cinnamon) in medium bowl. Set aside.
- In a large bowl, cream together butter and sugar.
- Mix in eggs and vanilla.
- Stir in dry ingredients in 3 batches.
- Add the rest of the ingredients and stir until combined.
- Spoon batter into cups.
- Bake 20-25 min.
- Place cream cheese and butter in a medium mixing bowl and cream until smooth using a rubber spatula.
- Mix in confectioners’ sugar.
- Add orange juice and continue to mix until smooth.
- Once cupcakes are frosted, sprinkle with chopped pecans.
