Here is a simple twist to add a little excitement to the average corn side dish. The corn and zucchini compliment each other nicely and the presentation looks wonderful.

Ingredients
  • 4 ears bi-color corn on the cob
  • 1 zucchini, grated
  • 2 tablespoons butter
  • salt, to taste
  • black pepper, to taste

Directions
  1. Using a knife, carefully cut the corn off the cob.
  2. Place corn into a saucepan with 2 tablespoons of butter and put over medium-low heat.
  3. Take the zucchini and grate it using your favorite grater.
  4. Stir the grated zucchini into the corn and season with salt and pepper, to taste.
  5. Cook for about 5-7 minutes.

Sounds tasty, quick, easy and simple! I'm not a big fan of corn but, satued corn is pretty good.

Just wanted to add knowing me, I probably would omit the butter and use bacon grease to satue with and then crumble up bacon in the veggies.
